დაბადების ადგილი: ქ. ლანჩხუთი.

დაამთავრა თბილისის სახელმწიფო უნივერსიტეტის სამკურნალო ფაკულტეტი 1928 წელს.

დიდი სამამულო ომის დროს იყო 47-ე არმიის მთავარი ეპიდემიოლოგ-ინფექციონისტი. 1954-1979 წლებში ხელმძღვანელობდა თბილისის სამედიცინო ინსტიტუტის ინფექციურ სნეულობათა კათედრას. გ. კვიტაიშვილი იკვლევდა ნაწლავების და ვირუსულ-ინფექციური დაავადებათა კლინიკასა და მკურნალობას. ექიმი-ინფექციონისტი, მედიცინის მეცნიერებათა დოქტორი(1951), პროფესორი(1951).
